Oatmeal Pear Pancakes

(Makes 4 servings)

Ingredients

  • 1 ½ cup flour

  • 2 teaspoon baking powder

  • ½ teaspoon nutmeg

  • 1 teaspoon cinnamon

  • ¼ teaspoon salt

  • 2 pears, cored

  • ½ cup quick oats

  • 1 tablespoon maple syrup

  • 1 egg

  • ¼ cup Greek yogurt

  • 1 ½ cup milk (I used Mootopia)

Optional toppings: nuts, honey, fruit

Directions

  1. In a large mixing bowl, add flour, baking powder, nutmeg, cinnamon and salt. Stir to blend and set aside.

  2. In a large blender cup, add pears, oats, maple syrup, eggs, greek yogurt and milk. Blend 30-45 seconds or until oats are finely chopped.

  3. Combine oat mixture with flour mixture. Stir well until all flour mixture is blended into oat mixture.

  4. Preheat griddle to 250 degrees F. Pour about ¼ cup of batter onto griddle. Cook pancakes until they begin to bubble and then flip to cook other side. Cook other side for 3-5 minutes or until pancakes are golden.

  5. Enjoy hot with optional toppings.

Note: If you prefer thicker pancakes, start with 1-1 ¼ cup of milk. If you prefer thinner pancakes, prepare batter as instructed. Combine flour and liquid batter together. Then add as needed for your preferred consistency.
