Lemon Blackberry Chicken
(Makes 4 servings)
Ingredients
2 tablespoons olive oil
4 chicken breasts
½ teaspoon salt
¼ teaspoon black pepper
6 ounces blackberries, rinsed
¼ cup sugar
2 lemons, juiced and set aside
Zest of 1 lemon
1 teaspoon cornstarch
2 teaspoons water
Directions
In stovetop pan, heat olive oil. Add chicken, season with salt and pepper. Sear for 10 minutes on one side. Flip and cover chicken. Cook for an additional 15 minutes, or until the internal temperature reaches 165 degrees F.
While chicken is cooking, in a separate pot, combine blackberries, sugar, lemon juice and lemon zest. Bring to a boil and simmer for 5 minutes. As the blackberries soften, with the back of a spoon, mash blackberries to break apart.
In a small bowl, whisk together cornstarch and water. Remove blackberries from heat, add cornstarch mixture to blackberry sauce. Return to heat and cook for an additional 1 minute to thicken.
To serve, plate chicken breast and top with blackberry sauce. Enjoy!
