Basil Pesto Chicken Flatbread

(Makes 4 servings)

Ingredients

  • 1.5 pounds chicken breast, cut into pieces

  • 6.7 ounce jar basil pesto

  • 4 Naan bread

  • 8 ounce mozzarella cheese ball, thinly sliced

  • 1 large tomato, thinly sliced

Topping: fresh basil

Directions

  1. Preheat oven to 350 degrees F.

  2. Place chicken in a 9 x 9 glass dish. Top with pesto. Bake 30 minutes, or until chicken reaches an internal temperature of 165 degrees F.

  3. Once chicken is cooked, remove from oven and set aside.

  4. On pizza stones or cookie sheets, lay out Naan bread. Top bread with mozzarella, tomatoes and cooked chicken. Bake for 15-20 minutes or until cheese is melted.

  5. Remove from oven and top with fresh basil.
